Sloe & Plum Gin

Tart and tangy, our hugely popular sloe gin has a rich depth of flavour – intensified by the addition of local Perthshire plums, hand-picked by the distillery team. There are distinct notes of pepper and sweet cinnamon from the base spirit, with a touch of nutty marzipan on the finish.

You will need:
35ml Persie Sloe & Plum Gin
15ml lemon juice, freshly squeezed
20ml sugar syrup (or a little less agave syrup)
1 egg white
ProseccoHave a go:
Add the sloe gin, lemon juice, sugar syrup and egg white to a cocktail shaker and vigorously dry-shake (without ice) for about 15 seconds. Add 3 or 4 ice cubes and shake again until your hand freezes against the shaker! Hand-crafted in Perthshire, the geographical heart of Scotland, this special edition has been created in small batches using natural botanicals, resulting in a quality that can’t be replicated at large scale. It has top notes of Caledonian pinewood followed by the warmth of peppery heather. The result is a fresh, grassy gin with a softly spiced finish.
The suggested serve is with tonic, Mediterranean tonic, lemonade or ginger ale. Garnish with a sprig of rosemary to tap into the herbaceous notes, or a wedge of grapefruit to give the gin a citrus kick.

Pinewood Conservation Gin
£34.00In collaboration with The National Trust for Scotland (NTS), we have created the wonderfully fresh and floral Pinewood Conservation Gin. Made with botanicals foraged from the wild heart of the Cairngorms, every purchase of Pinewood Conservation Gin supports their efforts to protect the pinewoods of Mar Lodge Estate and restore them to their former glory.
Caledonian pinewood is an iconic and much-loved natural and cultural resource of the Scottish Highlands. Statuesque ‘granny’ pines are scattered through the glens, many over 200 years old. The pinewood supports magnificent species such as pine marten, red squirrel, golden eagle, and the rare and diminutive twinflower.
But this woodland has been through hard times. Exploitation for timber, clearance of trees to create grazing land, and centuries of heavy grazing stifling natural regeneration has resulted in a woodland that is a shadow of its former self. Reduced in extent, fragmented and with an aging and dying population of trees, the future was looking grim.
The National Trust for Scotland is turning this around at Mar Lodge Estate National Nature Reserve, which holds nearly one thousand hectares of Scotland’s Caledonian pinewood. Young naturally seeded pines are now emerging from the heather in and around the forest, along with other species such as birch, rowan and willow. Under the ongoing care of the National Trust for Scotland we are working feverishly to restore the woodland to its former glory.
Pinewood Conservation Gin uses botanicals from plants found on the estate. Bog Myrtle and Wood Sorrel bring floral aromatics to the nose, Birch and Scot’s Pine lend a herbaceous, savoury body, and Blaeberries bring a warming honey-rich sweetness to the taste.
Pinewood Conservation Gin is 40% ABV and is available in 50cl bottles.

Just follow the five easy steps:
Step 1: Choose the Persie spirit from the options above. You can choose vodka in 70cl size or gin in 50cl size. If you’re booking a tasting and wish to decide on the day, choose Tour Collection Gin; we will have the label printed off and ready to be applied to the gin bottle of your choice.
Step 2: If you wish, you can choose a special design to suit the occasion rather than uploading an image: we offer Prescription, Friend and Keep Calm & Drink Gin designs (see our gallery images).
Step 3: Find a favourite picture. This could be of your friend or family member, their much loved holiday destination, their dog, cat or budgie! Ideally the picture should be in portrait format, but we can work with most of what we’re sent. One thing worth remembering, though – dark colours won’t print as well on a label. Upload your image using the link below. (*NOTE If you are choosing the Prescription, Friend or Keep Calm designs you don’t need to upload anything.)
Step 4: Decide what you’d like to say. Examples include: “I love you more than gin!”, “A special bottling for (name)”, “We go together like G&T”, “Daisy’s Gin” (or any other name), or a simple “Happy Birthday”. For the Prescription design we need two names (the recipient and the sender), for the Friend design we need two names and the occasion (the recipient and the sender and birthday/Christmas), and for the Keep Calm design we just need the name of the recipient.
Step 5: Add to basket! And if you like, add a gift bag for just £1.50. Then that’s the job done! We will feature the gin/vodka label on one side of the bottle and the personalised label on the other side.
Note: Remember to choose Click & Pick if you are collecting in person from the distillery. And if you have booked a tasting or tour, please pop the date in the delivery comment box so we can make sure your label is ready and waiting for your arrival.
