Collie Gin is the latest in the Persie Charity Collection! This special bottling is in collaboration with the Search and Rescue Dog Association (SARDA) Scotland, which is celebrating its diamond anniversary in 2026.
SARDA Scotland has been training and deploying search dogs to assist in locating missing and vulnerable persons across Scotland’s mountains for 60 years. Their mission is simple: to save lives.
The name of our new gin was fairly obvious as Collies are the predominant breed within SARDA Scotland’s pool of operational dogs! Known for their intelligence, agility, endurance and unmatched work ethic, the Collie possesses the perfect combination of physical and mental attributes for search and rescue work, making them ideal for Scotland’s challenging terrain and variable weather. These remarkable dogs are highly trainable and deeply attuned to their handlers, forming a bond that is crucial for effective teamwork in high-stress situations.

A dog’s sense of smell is estimated to be up to 100,000 times more sensitive than that of a human, enabling them to detect human scent over vast distances and in challenging conditions, making their noses a lifesaving tool. They can pick up minute traces of scent carried by the wind, identify it amidst other scents, and follow it to its source. So this explains the recipe Simon has cooked up! Collie Gin has been inspired by the rich, sensory landscape of the Scottish terrain where search and rescue dogs are trained to save lives.
Flavour profile
A savoury, herbaceous gin, reminiscent of mountains and moorlands, with top notes of heather, nettles and rosemary.
Suggested serve
If you like a dry gin or a martini, don’t mess with this: mix it with a full-fat tonic, or (if you’re in the mood for a kick) just add a splash of dry vermouth. And if you have a sweet tooth, Fever Tree rhubarb tonic is a winner!
Whatever your palate, garnish with a sprig of rosemary or fresh basil.

A Word About the Persie Charity Collection
Persie Distillery launched its first charity gins in 2018 with Labrador Gin, Spaniel Gin and Dachshund Gin Liqueur, with each bottle sold raising funds for Scottish dog rescue charity PADS. Pusscat Vodka launched in 2020 as a fundraiser for Edinburgh Dog & Cat Home. Since 2022, we have chosen to release a new limited edition to our Charity Collection each year – available for 12 months and dedicated to a particular cause. This has featured Terrier Gin for Terrier SOS (2022), Whippet Gin for JR Whippet Rescue (2023), Unbridled Gin for World Horse Welfare (2024), Golden Retriever Gin for Canine Partners (2025), and Collie Gin for Search & Rescue dogs (2026). During the year, each Charity Collection spirit has raised between £1,000 and £5,000 for the nominated charity.
